Founder Jason Scott’s truck concept was born from a unique fast-casual authentic Mexican taqueria concept. His vision has been to bring tacos back to their essence — food deeply rooted in the culture of Mexican street vendors. Jason along with his culinary team have built upon these traditional recipes and flavors utilizing all-natural ingredients while offering them in a uniquely engaging environment at not only their truck, but in their stores as well.
The Taco Truck focuses on tacos with varieties including barbacoa (shredded beef), Carnitas (braised pork), Chorizo (Mexican sausage), Polla Asado (marinated chicken), Al Pastor (marinated pork), Hongos (mushrooms and vegetables), Percado (catfish and Camaron (shrimp).
